Sweetcorn Chowder

This yummy, nourishing soup is a hit with children of all ages, from toddlers to teenagers and parents too! The sweetcorn chowder is idea for toddlers just learning to hold a spoon. remember to leave out any seasoning if you are planning to use the soup as toddler meal. 

Ingredients:

  • 1-2 tablespoon of olive oil
  • 1 onion, finely chopped
  • 1 tablespoon of flour
  • 2 cups of chicken stock
  • 1 cup of cooking cream
  • 1 cup of sweetcorn
  • 1/2 cup of frozen peas
  • 1/2cup of cheddar cheese, grated
  • salt and pepper to taste
  • Chopped chives to garnish

Heat oil in a large saucepan over a low heat. Add the onion and cook for about 5 minutes, until softened. Sitr in the flour and cook for 2 minutes, stirring all the time. Add the stock and cream, making sure you scrape any flour off the bottom of the pan. Add sweetcorn and peas, cook for a minute. Add grated cheese, and bring to a simmer. Serve soup warm, garnish with some chopped chive.
