Noodle Pancakes (8mth+)
What do you get when you combine your kid’s favourite pancake and noodles together? You get Noodle Pancakes! This recipe is perfect for mommies to cook a hearty meal in advance and it doesn’t taste soggy later. The simple recipe is also packed with the goodness of pumpkins, broccolis and eggs.
- 50g of noodles
- 2 eggs
- 2 tablespoon of flour
- 1 teaspoon of chicken powder (we used Groomy Chicken Powder)
- Half cup of chopped and steamed pumpkin
- 3 florets of broccolis, chopped finely
- 1 tablespoon of chopped spring onion
- 4 small chicken sausages, diced into small pieces
Place noodles in a pot of boiling water, cook for few minutes. Turn off heat, drain noodles and place it in a large bowl. Add eggs, flour and chicken powder into the large bowl, stir well. Then add the remaining ingredients in the bowl and stir gently until well combined.
Preheat a non-stick pan with a little oil; pour all the pancake mixture in the frying pan. Flatten the pancake with the back of spoon. Cook under low heat for 3-5 minutes, flip the pancake and continue cooking for another few minutes, or until golden brown.
Remove pancake on a cutting board, cut the pancake into rectangular slice. Served warm. The pancake is an ideal recipe for baby led weaning, and suitable to pack in your kids lunch box too.
