These Cheesy Potato Pancakes are crunchy on the outside and tender on the inside with melted cheese. It is easy to make with only 4 ingredients. If your family are cheese lovers, they will be impressed by this simple and yummy dish. And what’s more, it is baby friendly too!
(Makes 10 – 12)
- 200g of potatoes (about 2 – 3 large potatoes)
- 40g of rice flour
- 1 to 2 tablespoon of milk
- Some Mozarella Cheese
Steam the potato chunk until tender, and then mash them until smoothly. In a large bowl, mix mashed potato, rice flour and milk until well blended. Or until potato is easy to handle, not too sticky and not falling apart easily. Divide it into 10 small balls, flatten and place a teaspoon of mozzarella cheese in the centre, and seal the edges until filling is fully covered. Roll them slightly and flatten them in order to cook evenly.
Fry these pancake in a non-stick pan until golden brown. Transfer them on a plate and serve warm. Best eaten while it is still warm to enjoy the molten cheese.
